Crimson Velveteen Cake
So, I've learned a few things;
- Waiting until the end of the month to do all my baking projects is a terrible idea.
- February is a lot shorter than you'd expect.
- Frosting cakes is much harder without professional tools.
- I don't like whole wheat pastry flour.
This is the February "Cake of the Month." Originally a red velvet cake with cream cheese buttercream, I made this one with the Crimson Velveteen and Vegan Cream Cheese frosting recipes from Vegan Cupcakes Take Over The World.

I had to skip December and January's Cakes of the Month, but I plan to make them up by doing a few from last year instead. Blueberry Fields and Peanut Butter Chocolate, maybe.

OH yum, red velvet cake at it's finest. I wish I had some of that right this minute! (4 am..lol)
I loved those cupcakes. they look really good as a cake, I really like the decorating job.
now I'm singing blueberry fields forever instead of strawberry fields.
