I've mentioned before that I'm going to be taking a Baking and Pastry certificate program in the fall. The program includes some basic baking classes as well as classes on cake decorating and wedding cakes.
I was never officially "trained" as a cake decorator because of some scheduling issues when I switched departments... so, even though I will have over a year of experience before I start the program, it will be the only real training I will have received. Hopefully, I'll improve my (so-far mediocre) skills quite a bit.
After that, I'm seriously considering starting up a sort of "alternative" catering business. I don't intend on rivaling the two big wedding cake purveyors around town, but I do think that setting up an account with DecoPac and offering vegan/gluten-free/sugar-free birthday cakes could probably go over pretty well. I get a ton of people asking about that sort of thing at work... so, I think there is definitely a market for it around here.
I've been talking about selling vegan baked goods at the Farmer's Market for awhile now... and if I had a book of my cakes and catering information alongside a variety of cupcakes, I might pick up a client here and there. (And while it would likely get me fired, I could always answer questions about dairy-free or sugar-free cakes at work with a business card.)
...I had a lot more to say on this subject, but my mind just went blank.

Wow, how exciting! I think the farmer's market idea is great and makes a lot of sense. And who wants to deal with Bridezillas anyway? I'd much rather deal with someone getting a birthday cake :)

@Chelsea - Indeed. Other than the fact that I really don't have the skills for wedding cakes... I really, really don't want to deal with stressed out brides and such.
God help me if my roses turn out more baby pink than cameo pink...
